Discover the Allure of NV Variant Series White Cabernet Sauvignon

Posted on March 7, 2024 in Wine 101
When it comes to exploring the world of wines, the Variant Series White Cabernet Sauvignon stands out as an intriguing and unique choice. Our Variant Series showcases the amazing array of possibilities when a craft winery can control all vineyard and cellar influence on wine from the vine to the bottle.  The poster child for variant behavior is turning a traditionally rich tannic dark red wine into a white wine while retaining the rich feel of classic Cabernet.

A True White Wine from a Classic Red Grape
The NV Variant Series White Cabernet Sauvignon is a testament to the artistry of winemaking. While most Cabernet Sauvignon wines are known for their deep red color and robust flavors, the White Cabernet Sauvignon defies convention by offering a refreshing and delicate white wine experience. This enchanting transformation is achieved through a meticulous process that extracts the grape’s juice without prolonged contact with the skins, where the color and tannins are primarily found.

Crafting the White Cabernet Sauvignon:
To create this unique white wine, the winemakers carefully crush the Cabernet Sauvignon grapes and swiftly separate the juice from the skins, minimizing the absorption of color. This gentle extraction results in a pale golden hue that is both visually captivating and palate-pleasing. The subsequent fermentation and aging process further contribute to the wine’s crisp and vibrant character.

Cabernet Sauvignon vs. Sauvignon Blanc: Clarifying the Differences:
While the names might sound similar, Cabernet Sauvignon and Sauvignon Blanc are distinct varietals that offer vastly different wine experiences.
  • Cabernet Sauvignon: This red grape variety is renowned for producing bold, full-bodied red wines with rich flavors of dark fruit, cassis, and often accompanied by robust tannins. It’s a classic choice for red wine enthusiasts.
  • Sauvignon Blanc: On the other hand, Sauvignon Blanc is a white grape variety that produces crisp, aromatic white wines. These wines are characterized by their zesty acidity, herbal notes, and often display flavors of citrus fruits, green apple, and sometimes tropical nuances.

Chill Out: Why White Cabernet Sauvignon Should be Served Chilled:
Serving the NV Variant Series White Cabernet Sauvignon chilled isn’t just a suggestion; it’s a key to unlocking the wine’s full potential. By embracing the practice of chilling, you can savor the wine’s refreshing acidity, delicate aromatics, and nuanced flavors.

Chilling the White Cabernet Sauvignon helps to preserve its delicate aromatics and maintain its crisp freshness. The wine’s floral and citrus notes, as well as its subtle nuances, are more pronounced when the wine is chilled. A lower temperature prevents the volatile compounds responsible for these scents from dissipating too quickly.  Serving it chilled accentuates this acidity, creating a well-balanced and lively palate. As the wine warms up in the glass, the acidity can mellow slightly, revealing more layers of flavor and complexity.

The Perfect Pairing to Elevate Your White Cabernet Experience
Not only a unique and captivating wine, our White Cabernet is also an excellent companion to a variety of dishes. Its delicate flavors, vibrant acidity, and subtle aromatics make it a versatile option for pairing with a range of foods.

•  Seafood Delights: The crisp acidity and subtle fruitiness complement a wide array of seafood dishes. Try it with fresh oysters on the half shell, grilled shrimp, or ceviche. The wine’s delicate nature won’t overpower the flavors of the seafood.

•  Light Poultry Dishes: Whether it’s a roasted chicken with herbs or a turkey club sandwich, the gentle flavors and balanced acidity work well with the lighter profiles of poultry dishes. The wine’s acidity can cut through the richness of the meat.

•  Creamy Pasta Dishes: Cream-based pasta dishes, such as fettuccine Alfredo or a creamy mushroom risotto, find a perfect companion in the White Cabernet Sauvignon. The wine’s subtle citrus notes and refreshing acidity can balance out the richness of the creamy sauces.

•  Fresh Salads: Its herbal undertones and light body can complement a variety of salads, from mixed greens with goat cheese to a citrusy avocado salad.

•  Light Appetizers: Opt for light appetizers like bruschetta, goat cheese crostini, or smoked salmon canapés.

•  Soft Cheeses: Pairing with soft and creamy cheeses like brie or camembert can create a harmonious blend of flavors. The wine’s acidity can help cut through the richness of the cheese, creating a balanced and enjoyable pairing.

•  Fresh Fruit Platters: For a refreshing treat, serve with a platter of fresh fruits such as sliced melons, peaches, and berries. The wine’s gentle aromatics and subtle sweetness can enhance the natural flavors of the fruits.

Our NV Variant Series White Cabernet Sauvignon is a true masterpiece that challenges conventional expectations and introduces a delightful white wine made from the beloved Cabernet Sauvignon grape. Its pale golden hue, refined flavors, and intriguing backstory make it a unique addition to any wine lover’s collection. Remember, whether you’re savoring a glass on a warm evening or pairing it with a gourmet meal, the White Cabernet Sauvignon promises an exceptional and memorable experience that showcases the artistry of winemaking.

Toast to Your Health: 5 Health Benefits of Drinking Wine in Moderation

Posted on January 11, 2024 in Lifestyle
For centuries, wine has been an integral part of cultures across the globe. From the ancient Greeks and Romans to modern-day connoisseurs, wine has been a beloved beverage enjoyed by all. But did you know that wine, when consumed in moderation, can actually be good for your health?

That’s right, folks! Wine is more than just a tasty treat. Here are some of the health benefits of drinking wine in moderation:

1. Boosts Heart Health:

Studies have shown that moderate consumption of wine can improve heart health by increasing the levels of good cholesterol (HDL) in the body. Red wine, in particular, contains antioxidants such as Resveratrol that can help prevent heart disease.

2. Reduces the Risk of Stroke:
Wine is said to have had blood-thinning properties that can reduce the risk of blood clots, which can cause a stroke. A glass of wine a day may just be able can help keep the stroke away!

3. Promotes Longevity:
People who consume wine in moderation have been found to live longer than those who abstain. It’s worth noting that red wine tends to contain more antioxidants than white wine, particularly the antioxidant Resveratrol, which is found in the skins of red grapes. A study conducted in France found that the Resveratrol in red wine can increase longevity by activating a protein that slows down the aging process. So, while both red and white wine can have health benefits, red wine may have more potent antioxidant properties.

4. Boosts Brain Function:
Wine has also been shown to improve cognitive function and memory. The antioxidants in wine can help protect the brain from damage and reduce the risk of Alzheimer’s disease.

5. Reduces the Risk of Type 2 Diabetes:
Moderate wine consumption has also been linked to a reduced risk of developing Type 2 diabetes. The Resveratrol in red wine can help improve insulin sensitivity and reduce inflammation in the body. White wine also contains polyphenols, which are plant compounds that have antioxidant and anti-inflammatory properties. These polyphenols can help protect against certain chronic diseases, including Type 2 diabetes and certain cancers.

A Toast to Health and Meaningful Connections

It’s not just about the wine itself, but also the social aspect of sharing a glass of wine with loved ones or friends. Research has shown that having strong social connections and meaningful relationships can contribute to a longer and healthier life.

When we share a glass of wine with others, we are not only enjoying a delicious beverage but also engaging in meaningful social interaction. Whether it’s catching up with old friends, sharing a romantic moment with a partner, or enjoying a family gathering, wine can help create and strengthen bonds between people.

Studies have found that people who have strong social connections and supportive relationships tend to have better physical and mental health, as well as a longer lifespan. In fact, a study conducted by Harvard researchers found that strong social ties can have as much of an impact on longevity as quitting smoking or losing weight.

Moderation is Key

Now, before you go uncorking that bottle of Cabernet Sauvignon, it’s important to note that moderation is key. Too much of anything can be harmful, and wine is no exception. The recommended daily amount of wine is one glass for women and two for men. So, let’s raise a glass (in moderation, of course) to good health and a great glass of wine! Cheers!

Balsamic Steak Gorgonzola Salad with Grilled Corn

Pair with 2022 Viognier

Enjoy a perfectly, grilled steak marinated with a rich, sweet, and slightly tangy balsamic flavor. With each forkful, you experience a delightful contrast between the smoky, charred notes and the sweet depth of the balsamic. Complementing the steak is a vibrant salad that bursts with freshness and color. All of the ingredients are generously drizzled with a balsamic vinaigrette that mirrors the flavors of the steak, tying the dish together. Now, sip on a glass of Viognier, and you’ll discover the magic of this pairing. The wine’s aromatic bouquet fills the air with delicate floral notes and hints of ripe stone fruits. As you take a sip, the Viognier’s apricot, peach, and honeysuckle flavors meld seamlessly with the steak’s sweet balsamic glaze, creating a delectable contrast that enhances both the wine and the dish. Together, they elevate your dining experience to a level of culinary bliss.

FOR THE MARINADE:
1 lb sirloin steak
2 tablespoons balsamic vinegar, 1 tablespoon Worcestershire sauce
1/4 cup extra virgin olive oil, 1/2 teaspoon dijon mustard
1/4 teaspoon garlic powder, 1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper

FOR THE SALAD:
1 cup cherry tomatoes, halved, 1/2 red onion, thinly sliced
4 ounces Gorgonzola cheese, crumbled
2 heads endive lettuce, outer leaves removed,
halved and roughly chopped into 2 inch pieces
6 cups mixed spring greens, 1 corn on the cob, husk removed
1 tablespoon extra virgin olive oil, for drizzling corn

FOR THE GREMOLATA:
2 tablespoons basil leaves, minced, 2 tablespoons parsley, minced
1 clove garlic, minced, 1 tablespoon lemon zest

FOR THE BALSAMIC VINAIGRETTE:
3 tablespoons balsamic vinegar, 1/2 cup extra virgin olive oil
1/2 teaspoon dijon mustard
Dash of salt and fresh ground black pepper

DIRECTIONS:
In a medium size bowl, stir together ingredients for the marinade. Place steaks in a large zip-lock bag. Pour marinade over the steaks, seal the bag, and shake to coat. Chill in the fridge for 30 minutes. Make the gremolata: Combine the basil, parsley, lemon zest, and garlic in a small bowl. Set aside. Preheat a cast iron grill pan at medium-high heat or an outdoor grill. Drizzle corn on the cob with 1 tablespoon olive oil and liberally sprinkle salt and pepper. Using tongs, place on the heated grill. Cook each side until grill marks form on the corn kernels and they are somewhat softened, about 10 minutes total. When cool, slice corn kernels off the cob. Grill steak on both sides 4-5 minutes for rare to medium rare. Remove steak to a plate and let rest for five minutes. Slice thinly against the grain. In a small bowl, whisk together ingredients for vinaigrette. Toss together half of the vinaigrette, half of the gremolata, mixed greens, endives, tomatoes, gorgonzola, sliced corn, and red onion in a large bowl. Lay sliced steak on top of salad. Drizzle steak and salad with gremolata and remaining vinaigrette as desired. Enjoy!

1 medium bell pepper, red, yellow, or orange, diced

6 garlic cloves, minced

1 1/3 pounds ground turkey or chicken

1 15-oz. can white beans, drained and rinsed
