2015 VS White Cabernet

Data: 100% Cabernet Sauvignon

Alc: 11%, PH: 3.52, TA: 5.4, RS: 4

The Variant Series White Cabernet Sauvignon is a true “white” wine with big aromas; strawberry, melon, and peach are prominent with subtle floral back notes. This wine’s fruit plays on the palate integrating well with its acidity and sweetness, notes of strawberry and melon come to mind. Most White Cabernets are darker in color due to a more vigorous pressing. A softer press keeps most of the color locked in the skin, the result is a softer more subtle wine. Pairs well with spicy Thai dishes, curry spiced dishes, and fruit vinaigrette salads with goat cheese.

2015 Symphony

Data: 90% Symphony, 10% Viognier

Alc: 12.8%, PH: 3.35, TA: 6.2, RS: 0.9

Symphony is cross between two varieties: Muscat of Alexandria and Grenache Gris. This is lusciously brilliant and aromatic wine. This wine exudes aromas of honeysuckle, orange and lemon aromas and flavors of pear and apricot with a hint of tart grapefruit. Crisp clean finish. This wine is very aromatic, and fruity to the taste. Pair with teriyaki chicken.

2015 VS Cabernet Sauvignon

Data: 75% Cabernet Sauvignon, 18% Zinfandel, 7% Petite Sirah

Alc: 13.8%, PH: 3.83, TA: 6.39, RS: 1.95

Our Variant Series is a blend of Cabernet Sauvignon and Zinfandel. This is a very popular California blend style, combining the concentrated jammy aromas and flavors of Zinfandel to the well-structured framework of the Cabernet. The result is a full-bodied wine with lots of fruit. The addition to Petite Sirah enhances the mid-palate. This Cabernet makes for a great outdoor barbecue red wine. Serve it slightly chilled with a Texas style barbecued brisket.

2014 Double Dog

Data: 53% Cabernet Sauvignon, 47% Petite Sirah

Alc: 13.7%, PH: 3.71, TA: 6.08 RS: 0.81

A Wilson Creek classic this wine is a beautiful blend of two grapes. Cabernet Sauvignon and Petite Sirah. Rich flavors of plum, cherry, and blackberry cascade to a nice full smooth tannin finish. The fruit and acidity of this wine is well defined and structured making this a great wine to be served with Roasted foods such as roasted pork or beef.

2014 Winemaker's Select Syrah

Data: 90% Syrah, 5% Viognier, 3% Zinfandel, 2% Cabernet Franc

Alc: 14.3%, PH: 3.75, TA: 5.4, RS: 0.57

This Syrah displays many attributes of a classic Syrah wth a Temecula accent. Tobacco, leather, and blackberry aromas fill the glass with a hint of oak spice. On the palate, you may find that the fruit is forward of the acid displaying typical Syrah earthiness of leather followed by berry highlights of black currant and blackberries. The tannins are well integrated giving a full mouth feel and a long finish. Try this Syrah with BBQ ribs or anything off of the grill especially rib-eye steak.

2013 Winemaker's Select Zinfandel

Data: 90% Zinfandel, 10% Merlot, 4% Merlot

Alc: 14.3%, PH: 3.45, TA: 7.09, RS: 0.92

This rich bodied Zinfandel reveals a robust fruit, sweet oak, and spiced nose. Layers of cedar coffee and blackberry are layered over well incorporated oak and fine tannins on the finish. Supple in flavor yet firm in structure. Try with barbecue brisket or roasted game fowl such as duck or quail.

2013 Family Reserve Meritage

Data: 60% Cabernet Sauvignon, 20% Cabernet Franc, 13% Merlot, 7% Malbec

Alc: 13.9%, PH: 3.65, TA: 7.34 RS: 0.43

This blend of Bordeaux grapes contribute to the unique flavor of this wine. Brilliant garnet in color, this wine's robust character is packed with aromas and flavors of dark red fruits finishing with subtle notes of cedar and chocolate. We love this wine  with BBQ tri-tip grilled to medium rare with a light adobo sauce and served with sautéed mushrooms and roasted fingerling potatoes.

2015 Petit Verdot

Alc: 14.5%, PH: 3.41, TA: 5.67, RS: 0.52
Pronounced (Peh-TEET Ver-DOE), this wine originates from a beautiful and historic grape that is used as one of the red grapes in the prestigious wines of Bordeaux, France. It now thrives as a single varietal in our warm, Southern California climate. The smallish berry sizes and thicker skins make for a big and bold wine with lots of dense color and freshness.

There are black fruit flavors of plum, black cherry and blackberry, with a hint of violet. Oak barrel aging adds nuanced tones of spiciness and vanilla. We also blended in 5% of a rich red grape called Tannat to add even more fullness. This will pair well with anything that can stand toe-to-toe with it: skirt steak, lamb kabobs, spicy pork or veal, and also various cheeses like Manchego. 

2015 Pinotage
Alc: 14.8%, PH: 3.36, TA: 5.87, RS: 0.43
Our Explorer Series search brought us to South Africa, the home of the extremely popular Pinotage grape (pronounced PEEN-eh-tahzh). Pinotage is a crossing of Pinot Noir and Cinsault vines (pronounced san-sow). The crossing captures Pinot Noir’s delicate elegance and Cinsault’s hardy-nature. Pinotage is rustic and earthy yet it also exudes flavors of plum sauce, blackberry, raspberry, and licorice. The tannins are pronounced yet there is a slightly sweet note on the finish – like lightly flavored smoke.

This is truly a “foodie wine” made in the old-world style, meaning there is higher, mouthwatering acidity which makes it a great food pairing wine. The tannin in this wine helps cut through the fats in dishes such as osso buco, filet, ribeye, and even game dishes. So enjoy this Pinotage with food! Try a sip, then take a bite of food, then take another sip. You will see how this wine pairs amazingly well with the right foods.

Alicante Bouschet
Alc: 20.6%, PH: 3.10, TA: 7.20, RS: 17.0
The beautiful Alicante Bouschet (Al-eh-CAHN-tay BOO-shay) grape originated in France and became popular in Portugal. It was widely planted in California during prohibition times because the grape juice could easily be converted to wine in the average home. This vineyard was planted in the famous Cucamonga Valley (Riverside County) in 1940 therefore, truly “old vine.” This late harvest wine was made in a true Port style. The fermentation was stopped by the addition of high proof, neutral grape spirits (150 proof). This fortification of the wine kills off the yeast preserving the high sugar content. The yeast is not able to eat up all the sugar to produce alcohol, but the high proof brings the alcohol up to 21%! So it is sweet, but with a lot of alcohol… perfect for a digestif or as an evening sipper.

This port wine exudes flavors of dark berry fruit, cherry, and rich baking spices. It lingers with a round, luscious, fruitcake sweetness through a long, smooth finish. The extended “hang time” of the grape creates a delicious, sweet wine. The wine was aged in barrels in a warm environment for six years creating a caramelized, rich flavor. The Alicante Bouschet from this famous vineyard won a Gold Medal in the Riverside International Wine Competition. 

Moscato D'Piemonte
Alc: 5.5%, PH: 2.98, TA: 7.30, RS: 9.2
Piemonte is one of the most prestigious wine regions in the world. The Northwest Italian region is 43% mountainous, 31% hills and only 26% plains. The “d” in an Italian label means “of.” So, this is Moscato of Piemonte. The Moscato (also called Muscat) grape is deeply perfumed with a fruit-basket aroma. The name comes from “mosca” which means “insect” because bees and other insects are attracted to the grape’s floral scent.

After harvest, the grapes are gently squeezed and transferred into a pressurized tank. Yeast is added to start the fermentation. To achieve the exact amount of bubbles (CO2) in the wine the fermentation is stopped or “arrested” by chilling the wine down. When it is chilled, the wine is filtered to remove any yeast and lees (spent yeast cells) to avoid a secondary fermentation in the bottle. Enjoy this wine with a picnic, on the patio, by the pool, and especially with dessert. Serve cold!
